Remove and set aside.<\/li>\n\n<li><strong>Cook the vegetables<\/strong>: In the same pot, saut\u00e9 the vegetables until soft and slightly caramelized.<\/li>\n\n<li><strong>Simmer everything<\/strong>: Add the beef back to the pot along with bay leaves, allspice, and peppercorns. Pour in enough water (or beef broth) to cover everything. Simmer on low heat for 2-3 hours, or until the beef is tender.<\/li>\n\n<li><strong>Make the sauce<\/strong>: Remove the beef and blend the vegetables into a smooth sauce. Stir in cream, vinegar, sugar, and salt to balance the flavors. Heat gently without boiling.<\/li>\n\n<li><strong>Serve<\/strong>: Slice the beef and serve with the sauce, garnished with lemon slices and cranberry sauce.
